Extra vergine olive oil.
The olive tree is at the border of the mediterranean
maquis and the Etruscans were the first who
cultivated this plant, which is testified
by archeological finds near the farm and in
the sourroundings of Vada, Castiglioncello,
Rosignano. On the farm the olive trees cling
to tuffs and marine sandstones. They are centuries-old
,
cultivated on terraced hills and ventilated
by the breeze of the sea with sun during the
whole day. The high quality was obtained by
a lot of manual work, continuous research
of quality, respect for the natural biological
cycle of the plants and fruit, pressed in
a smooth and traditional way.
Olive cream. The olives
from the "leccina" quality are picked
manually and prepared with salt and olive
oil.
Marmalade. This area is
short of water and the fruit plants are not
irrigated, therefore the fruit is very sweet
and pulpy. Our marmalade is a result of the
daily work respecting the cycles of the nature
and the traditions of this generous land.
The ingredients simply are the fruit which
is offered by nature and sugar , without any
addition of artificial ingredients. You can
taste the following marmelades: orange, strawberry,
lemon, persimmon, black cherry, apricot, plum,
peach, tomatoe,
fig and walnut, carrot and hazelnut, pumpkin
and almond, kiwi, pears and pine-kernel, apple
and raisin, blackberry, Indian fig, grape,
bitter orange, onion.
Tomato Purée. In
summer when the tomatoes are ripe and have
got the colour of the rising sun we pick them
and then make a sauce of great taste and quality,
it is ready to serve you just have to add
a little olive oil. Our aim is to discover
again the natural and simple taste of food.
